  Vegetable Omelet


1/2 cup egg white
1 cup chopped, mixed vegetables such as spinach, mushroom or onion
Salt and pepper to taste
cooking spray




1. Spray a non-stick skillet with cooking spray.
2. Sautee vegetables on medium heat for 3 to 5 minutes.
3. Add egg white and cook until set on one side.
4. Flip carefully and cook the other side until set.
